Ingredients

  • 800g joint gammon
  • 500g butternut squash, diced
  • 1 red onion, sliced
  • 1 tbsp sweet chilli sauce
  • Black pepper

Steps

1 Preheat the oven to 200⁰C, 400⁰F, Gas Mark 6. Boil the gammon in a saucepan of water for 60 minutes. Remove from pan and cut away any fat from the outside of the joint.

2 Boil the squash in the same water then drain and place in a non-stick roasting tray, adding the onion.

3 Sit the joint on top and drizzle with the chilli sauce. Season with black pepper. Bake in the preheated oven for 20 minutes until browned. Serve hot or cold with additional vegetables or salad.
