Tofu and vegetable stew (makes enough for tomorrow). Heat a little olive oil in a large pan Add 1 chopped onion and crushed garlic clove and cook until soft. Add 200g tofu cut into chunks and cook for 5 minutes. Add 1 carrot chopped, 1 courgette chopped, 1 can of chopped tomatoes and 100g broccoli florets. Cover and simmer for 40 minutes. Serve with 1 pitta bread.
