Day 26

Breakfast
Mango chia pudding. Blend 100g mango with 200ml coconut milk then stir in 2 tbsp chia seeds. Chill overnight. Top with yogurt to serve.

Lunch
Mixed bean salad. Mix together ½ can mixed beans with chopped romaine lettuce, baby spinach leaves, ½ red pepper, cucumber slices. Serve with 30g cooked rice.

Dinner
Tapenade crusted fish. Spread a little tapenade onto a cod fillet. Bake for 15 minutes or until cooked. Serve with steamed vegetables.

Snack
2 squares of dark chocolate, piece of fruit.
