Day 20

Breakfast
Serve 2 slices of Parma ham with 1 poached egg and wilted spinach.

Lunch
Quinoa feta salad. Cook 40g quinoa and toss with handful of chopped herbs, cucumber, celery, ½ red and orange pepper and 60g feta cheese plus some pine nuts.

Dinner
Mackerel and rocket pasta. Cook 50g pasta. Drain then add 1 flaked smoked mackerel fillet with 1tbsp soft cheese, lemon juice and herbs. Serve with salad.

Snack
Red pepper strips with guacamole.

 

Exercise
Rest day.
